Il Grana e il pesce: due amanti perfetti
I
n questo caso l’amante è il pesce perché secondo molte teorie e molti insegnamenti l’abbinamento grana-pesce è sconsigliato e per l’appunto parliamo di amanti perché, se prepariamo un piatto a base di pesce e ci inseriamo del parmigiano senza esagerare, diamo carica e forza al sapore ed ecco che abbiamo l’ingrediente segreto: “l’amante”. Così, parlando di formaggi, un pomeriggio ho avuto l’occasione di conoscere il signor Antonio Budano, il “Re” del parmigiano. A questo punto sono sceso nel particolare: il Parmigiano Reggiano. Tra le tante varietà ho scelto la riserva Gran Maestro stravecchio classico casello 1126. In primo luogo perché è una qualità “eccellente” e ha il marchio “extra”. In secondo luogo perché è un prodotto di nicchia nelle Marche lo troviamo solo all’Antica bottega del Re formaggio vicino al Teatro delle Muse di Ancona. Oltre ai molteplici riconoscimenti si onora d’essere il preferito della casa automobilistica “Ferrari”. La particolarità di questo parmigiano gli viene dalle essenze contenute nei foraggi “fioriti” di montagna, perché sono ricchi di fiori ed erbe aromatiche allo stato naturale. E’ da questo passaggio che le essenze vengono trasferite al latte, in quanto queste sono parzialmente liposolubili. In questo modo è possibile avere un lungo invecchiamento arricchendosi sempre di più di aromi senza alterare la dolcezza del sapore.
Crema tiepida di parmigiano con purè di pomodoro al timo e coda di scampo in crosta di pane Ingredienti (per 6 persone): g 400 parmigiano grattugiato; g 700 panna fresca; g 400 pomodori maturi; n.6 code di scampi sgusciati; g 200 massa di pan brioche; g 6 timo fresco; g 2 semi di coriandolo; g 10 prezzemolo tritato; olio extra vergine di oliva raggia; sale e pepe ✔ Miscelare il parmigiano con la panna e i semi di coriandolo e farli riposare una notte. Portare il composto a 75° a bagno maria o al microonde. Frullarlo bene e passarlo al colino cinese. Tagliare i pomodori a pezzi, salarli e peparli leggermente. Aromatizzarli con il timo sfogliato. Stenderli in una placca e farli asciugare in forno ventilato a 100° fino a perdere metà della consistenza. Passarli al setaccio e aggiustare di sapore. Insaporire le code di scampo e prezzemolarle. Formare 6 palline con la massa di pane. Stenderle un poco e avvolgere attorno le code di scampo creando un piccolo panino. Farlo lievitare e cuocere in forno a 200° per 5-8 minuti circa.

Grana and fish: the perfect affair We’ll be using fish in this recipe precisely because so many theories and schools of thought advise against combining Grana and fish. Yet, used judiciously in a fish based recipe, Parmesan adds richness and enhances flavour, acting as a secret ingredient or, indeed, ‘lover’,in a perfect affair. One afternoon, I had the honour of meeting the king of Parmesan himself - Antonio Budano. So, during the course of our conversation, I got to the real issue - Parmigiano Reggiano. Of the many varieties available, I chose the Gran Maestro Stravecchio Classico Casello 1126 reserve. Firstly, because this is an excellent quality cheese, bearing the “extra” mark, and secondly, because here in the Marche region, we can only find this niche product at the ‘Antica Bottega del Re Formaggio’ cheese shop near the ‘Teatro delle Muse’ theatre in Ancona. In addition to its many official acknowledgments, this cheese also has the honour of being the favourite Grana at Ferrari. The uniquenessof this cheese derives from the floral essences of the mountain pastures, which naturally include a multitude of flowers and herbs. It is here that these essences, which are partially fat-soluble, are transferred to the milk. This permits a very long aging process, during which the aromas continue to develop without altering the sweetness.
Tepid cream of Parmesan with tomato and thyme puree and Scampi tail in a bread crust Ingredients (serves 6): 400 g grated Parmesan; 700 g fresh cream; 400 g ripe tomatoes; 6 shelled Scampi tails; 200 g Brioche dough; 6 g fresh thyme; 2 g coriander seeds; 10 g chopped parsley; extra virgin olive oil; salt and pepper ✔ Mix the Parmesan with the cream and coriander seeds and set aside to rest overnight. Warm the mixture to 75 °C in a Bain Marie or microwave. Blend well and pass through a chinoise sieve. Chop the tomatoes and season lightly with salt and pepper. Flavour with the broken up thyme. Lay on a baking tray and dry out at 100 °C in a fan assisted oven to half the original volume. Pass through a sieve and season. Season the Scampi tails and sprinkle with parsley. Make 6 small balls out of the bread dough. Flatten slightly and wrap around the Scampi tails to form a small sandwich. Allow to rise then bake at 200 °C for 5-8 minutes.

Anche quest’anno all’Hotel Fortino Napoleonico di Portonovo - rinomato ristorante nonché splendido esempio di struttura architettonica difensiva ottocentesca, inserita nell’indimenticabile contesto del Conero - ha avuto luogo l’ormai consueto incontro di creatività culinarie d’eccellenza quali quelle di due grandi e acclamati chef della cucina italiana, Giorgio Nardelli e Paolo Antinori. La ‘sfida’ della serata dello scorso 7 agosto era quella di sposare i prodotti dell’Alto Adige con i prodotti di Portonovo. Come dire, montagna e mare, delizie di terra e delizie d’acqua. Un tripudio di sapori ed accostamenti gastronomici inediti destinati a solleticare le papille gustative. Lo scenario in cui la fantasia degli chef ha preso corpo – che originalmente doveva essere la meravigliosa terrazza del Fortino Napoleonico resa impraticabile dalla pioggia –è stata la sala ‘dei Marescialli’ dove lo staff tecnico ha dimostrato grande professionalità offrendo un servizio di altissimo livello ai centoventi fortunati invitati. Protagonista della serata lo straordinario buffet distribuito in quattro grandi isole e nel magnifico ed imperiale tavolo centrale. Un buffet pensato come ha voluto sottolineare il grande chef Nardelli - con l’intenzione di far incontrare i vostri gusti con la nostra cultura, certi che le gioie della gola possano bastare, qualche volta, ad abbellire un’esistenza. Alcuni esempi di questo armonia di sapori di mare e montagna? Sbirciamo il menu! Gli scampi dell’Adriatico incontrano i fingerli dell’Appennino nel risotto carnaroli; il polipo in guazzetto con straccetti di pasta, patate e porcini all’olio Marchigiano; la bordura d’orzo con ratatuille di verdure e cozze del Conero su crema di pomodoro; orata imperiale steccata ai sapori del sottobosco; gelatina di mango alle spezie dolci. Again this year, the Hotel Fortino Napoleonico in Portonovo – a famous restaurant and splendid example of 19th century defensive architecture, in the beautiful surroundings of the Conero – housed the traditional meeting of excellent culinary creativity, with the two great and acclaimed chefs of Italian cuisine, Giorgio Nardelli and Paolo Antinori. The challenge proposed on the evening of 7th August was to marry the products from the Alto Adige with those of Portonovo – mountains and sea, therefore, delights of the land and water. A blaze of flavours and gastronomic combinations, which would not fail to entice our taste buds. The creative challenge should have been held in the lovely terrace of the Fortino Napoleonico, but it was impossible due to the rain, and was therefore held in the Marshall’s Hall, where the technical staff showed all their professionalism, with excellent service offered to the lucky 120 guests. The highlight of the evening was the exceptional buffet which was spread over four large islands and the magnificent imperial central table. As the great chef Nardelli declared - A buffet created to ensure your tastes meet our culture, as we are certain that the joys of the table are often enough to make life more attractive. Would you like to see a few examples of this harmony of sea and mountains? Let’s take a look at the menu! The Adriatic scampi meet the Apennine ‘finferli’ mushrooms in the Carnaroli risotto; stewed octopus with pasta strips, potatoes and porcini in oil from the Marche; barley trim with mixed vegetables and muscles from the Conero on creamed tomatoes; Imperial bream stuffed with the flavours of the underbrush; Mango jelly with sweet spices. Vincenzo Spinosi, promotore della Carta delle Paste, e Paolo Antinori, chef del Fortino Napoleonico – dopo il successo ottenuto nel marzo dello scorso anno allo Shangri-La di Bangkok con la sfilata degli ‘Spinosini omega 3’ e i sapori delle Marche – ha replicato lo scorso maggio a St. Regis Hotel di Pechino, che fa parte della catena Sheraton, per promuovere la Carta delle Paste nel ristorante Danieli. Nel corso delle sei serate in cui Spinosi e Antinori sono stati ospiti del Danieli, è stato proposto un menu all’insegna della cucina marchigiana con cinque primi piatti tutti a base di Spinosini, perfino il dolce: ‘crostatine di Spinosi agli agrumi’. Lo chef Antinori è stato molto apprezzato esibendosi nella preparazione di piatti tradizionali della cucina marchigiana. ‘La prima serata’ – racconta Spinosini – “abbiamo tenuto una conferenza con oltre venti giornalisti parlando del nostro territorio e della mia idea della Carta. Poi, la sera, abbiamo avuto come ospiti rappresentanti dell’Ambasciata Italiana, dell’Unione Europea e dell’Ice”.
Vincenzo Spinosi, promoter of the Pasta Map, and Paolo Antinori, Chef in the Fortino Napoleonico, strong on the success they received last year during the Shangri-La in Bangkok with the parade of the ‘Spinosini omega 3’ and the flavours from the Marche region, did a repeat last May in the St. Regis Hotel in Peking, part of the Sheraton chain, to promote the Pasta Map in the Danieli Restaurant. During the six evenings when Spinosi and Antinori were guests at the Danieli, a menu was proposed based on Marche regional cuisine, with five first courses based on “Spinosini”, even the dessert: “Spinosi citrus fruits tart”. The chef Antinori was highly appreciated in his preparation of the traditional Marche dishes. “The first evening” – Spinosi told us – “we held a press conference with more than twenty journalists, talking about our region and my idea for the Map. Then in the evening we had representatives from the Italian Embassy, the European Union and ICE as our guests.
Il prodotto - Gli Spinosini, l’ultimo prodotto di casa Spinosini nato nel 2000, rappresentano oggi un prodotto di punta della tipicità alimentare marchigiana. Si differenziano delle altre paste all’uovo Spinosi per l’impiego nell’impasto di uova con Omega 3 che provengono da una varietà di galline livornesi. Si presentano con una forma quadrata, con uno spessore di 0,8 mm. Per l’impasto vengono utilizzate semole speciali di grano duro e solo uova fresche intere con Omega 3.
The product - Spinosini is the latest product from Spinosini created in 2000, and is now one of the leading products in typical Marche cooking. It is different from other Spinosi egg pasta because Omega 3 eggs are used in the mixture, which come from a special variety of hens from Leghorn. It is square shaped, 0.8 mm thick. Special hard wheat flour and only fresh whole Omega 3 eggs are used for the mixture.

Lo Stoccafisso all’anconitana preparato, secondo l’antica ricetta di Getulio Zaccaria indicata dall’Accademia, dagli chef del Fortino Napoleonico Paolo Antinori e Adino Messi ha vinto il 1° premio assoluto al concorso nazionale dedicato al merluzzo ed organizzato dall’Ordine dei Ristoratori Professionisti Italiani lo scorso 22 settembre. Ed ecco gli ingredienti del successo: un sapiente mix di olio vergine di oliva, patate gialle, vino bianco Verdicchio, aglio, cipolle, prezzemolo, origano, maggiorana, rosmarino, timo, pepe bianco e nero, pomodori.
The Stoccafisso all’anconitana prepared according to Getulio Zaccaria’s ancient recipe mentioned by the Academy, and made by the chefs of the Fortino Napoleonico Paolo Antinori and Adino Messi, has won outright first prize in the national competition dedicated to cod and organised by the Order of Italian Professional Restaurateurs on the 22 September. Here are the winning ingredients: a skilful blend of extra virgin olive oil, yellow potatoes, Verdicchio white wine, garlic, onions, parsley, origano, marjoram, rosemary, thyme, white and black pepper, tomatoes.

Un nuovo talento in cucina È lo Chef Marco Pilia del ristorante “Sesamo”, coadiuvato in cucina da Diego Scolamiero, per presentare una variazione del millefoglie:
Millefoglie con crema di parmigiano, pere Flamingo e gelatina alla grappa Ingredienti: g. 200 Parmigiano 30 mesi di stagionatura; g. 200 Parmigiano 16 mesi di stagionatura; 500 g pere varietà Flamingo; grappa di pere: 300 g gelatina in fogli: 3 fogli; latte; panna; Ribes; uva bianca Preparazione cialda parmigiano per millefoglie Utilizzare il parmigiano con 30 mesi di stagionatura. Riscaldare molto bene un padellino antiaderente, versare il parmigiano grattugiato ed allargarlo con un cucchiaio di legno. Appena si indurisce, trasferire la cialda in un piatto e tagliarla in forma rotonda. Lasciare raffreddare. Ripetere l’operazione. Per ogni porzione sono previste 3 cialde. Pere Flamingo per decorazione - Affettare una pera. Passare le fette in albume e zucchero sbattuto. Appoggiare le fette su una placca. Metterle in forno a 60° gradi per 3 ore Ristorante Sesamo Gelatina di grappa di pere - In un padellino fare bollire la grappa. C.so Rosselli 54 – Torino Dare fuoco all’alcool. Ogni 300 grammi di grappa aggiungere 3 fogli di www.sesamoristorantetorino.com gelatina Crema di parmigiano - Preparare la crema di parmigiano, utilizzando il parmigiano con 16 mesi di stagionatura con il latte ed aggiungere la panna. A cottura ultimata aggiungere una dadolata di pere. Composizione del piatto - Preparare la millefoglie alternando una cialda di parmigiano, la crema al parmigiano e terminare con la cialda. In una ciotolina versare la gelatina di pere. Decorare il piatto con le fettine di pera, il ribes e l’uva.

Layered cake with Parmesan cream, Flamingo pears and grappa jelly Ingredients: 200 g. Parmesan after 30 months ripening; 200 g. Parmesan after 16 months ripening; 500 g Flamingo pears; pear grappa; 300 g. gelatine leaves: 3 leaves; milk; cream; blackcurrants; white grapes. Prepare the Parmesan wafers for they cake Use the 30 months’ ripened Parmesan. Heat a small nonstick pan until it is very hot, pour in some grated Parmesan and spread it round with a wooden spoon. When it hardens, turn the wafer onto a plate and cut it to form a circle. Leave it to cool. Repeat the operation, there are 3 wafers for each portion of cake. Flamingo pears to decorate - Slice a pear, dip the slices in egg white and sugar beaten together. Place the slices on an oven tray and cook in the oven at 60° for 3 hours. Pear grappa jelly - Boil the grappa in a small saucepan, then flame the alcohol. For each 300 grams of grappa add 3 gelatine leaves. Parmesan cream - Use the 16 months’ ripened Parmesan to prepare the cream, mixing the grated cheese with the milk and cream in a small saucepan and cook until smooth, when it is cooked add some chopped pears. Preparing the dish for serving - Prepare the cake by alternating a Parmesan wafer, the Parmesan cheese and finish with a wafer on top. Pour the pear jelly into a small dish. Decorate the cake with the sliced pears, the blackcurrants and grapes.

Il più amato e… il più imitato ! Il grana è uno dei tanti tesori orgoglio del nostro patrimonio gastronomico e per di più presente in tutto il territorio nazionale: dalle Alpi a Lampedusa. Un prodotto unico che mangiato anche così, da solo, grazie alle sue caratteristiche organolettiche può fungere quasi da pasto, ma non solo. Credo che la sua grande peculiarità sia quella di essere un ingrediente che, sia usato in maniera preponderante che con una semplice “spolverata”, resti il più adottato nella cucina italiana. Come sempre accade ai nostri prodotti, essendo un ingrediente così importante l’imitazione è sempre presente. Ed eccola spuntare principalmente all’estero, ma nemmeno da noi manca. Questo fatto fa sì che si ritrovi all’interno del nostro Paese del grana prodotto, per fare qualche esempio, in Argentina o in Germania. Purtroppo l’Unione Europea, così attenta nel metterci vincoli e divieti su tanti prodotti tipici al fine di proteggerli, non riesce a tutelare in pieno il grana. La speranza di tutti (produttori e consumatori) è ora riposta nell’Autority alimentare che, stabilita finalmente la sua sede a Parma, possa riuscire a mettere ordine in questo genere di cose. Per tornare al discorso iniziale, il territorio nel quale abbiamo sede, la Repubblica di San Marino, ha una tradizione alimentare basata per la maggior parte sui primi piatti ed il grana ne è un alimento insostituibile; basti pensare a tutte le paste imbottite e al piatto che più ci contraddistingue: il passatello. Il passatello è sicuramente il tesoro della nostra tradizione gastronomica e, pur proponendolo in tutte le sue varianti e le personalizzazioni possibili, il grana rappresenta sempre quell’elemento che gli dona la struttura ed il carattere. La ricetta riportata di qui di seguito è una personale interpretazione dei passatelli per poter portare sulle vostre tavole, fra le tante tradizioni culinarie, anche un pezzo di tradizione sammarinese…buon appetito!

The most loved… the most copied! Parmesan is one of the many prides of our table and can be found throughout the country, from the Alps down to the island of Lampedusa. Perfect to be eaten alone, thanks to its excellent sensorial features it is almost a meal in itself, but also a simple sprinkling on numerous different dishes makes it one of the most used ingredients in Italian cooking. As always with our products, as it is such an important ingredient, imitations are inevitable, and they are now popping up all over, mainly from abroad, but quite a few at home as well. For example we can find Parmesan on sale here that is produced in Argentina or Germany. Unfortunately the European Union, so careful at placing restrictions and bans on numerous typical products to protect them, is unable to safeguard our Parmesan. The hopes of all the producers and consumers alike now lie with the Food Authority, which, having finally established its headquarters in Parma, can sort out this matter. To go back to our initial comment, in the land where we have our headquarters, the Republic of San Marino, food traditions are mainly based on first courses, and Parmesan is an irreplaceable component; just think of all the various stuffed pastas and our most typical dish: Passatello. Passatello is without doubt the treasure of our culinary traditions and no matter how many different variations or individual touches we may add, Parmesan remains that ingredient that gives it all its structure and character. The recipe that follows is a personal interpretation of Passatelli, to give you the chance to try, among all the others, something of San TCG Magnum, Sirman Marino’s culinary traditions – Bon Appetite!
Passatelli con cardi e tartufo nero Ingredienti (per 4 persone): Per i passatelli: 100 g di pane grattugiato; 100 g di grana; 2 uova; scorza di limone grattugiata; noce moscata; sale q.b. Impastare assieme tutti gli ingredienti (tranne il tartufo) fino ad ottenere un impasto omogeneo. Per il condimento: 50 g di tartufo nero; 1 cardo. Pulire, lavare e cuocere i cardi in abbondante acqua salata. Quando sono a cottura, raffreddarli, tagliarli a julienne e fare altrettanto con il tartufo per poi passare tutto in padella con 3 spicchi d’aglio. Procedimento: schiacciare con lo schiacciapatate l’impasto dei passatelli ottenuto precedentemente, realizzando così la forma del passatello. Cuocere i passatelli in brodo, scolarli un po’ bagnati e saltarli con il condimento. Disporre sui piatti di portata, spolverare con grana invecchiato e servire.
Passatelli with Thistles and Black Truffles Ingredients for 4: For the passatelli - 100 g grated breadcrumbs; 100 g Parmesan; 2 eggs; grated lemon rind; nutmeg; salt to taste. Mix all the ingredients together (except the truffles) to form a smooth mixture. For the seasoning: 50 g black truffles; 1 thistle. Clean, wash and cook the thistles in plentiful salted water. When they are cooked, leave to cool, cut into strips, cut the truffles into strips as well and then toss the thistles and truffles in a pan with 3 garlic cloves. Procedure:use the potato masher to mash the passatelli mixture, to give the typical passatello shape. Cook them in broth, drain, but keeping a little of the cooking water and then toss them in the pan with the seasoning. Place on a serving dish, sprinkle with very ripe Parmesan and serve.

Un racconto in tre ricette Tortino di grana, zucchine e pinoli in passata di peperoni gialli dolci e concassè di melanzane al peperoncino di noverato macinato
✔ Ingredienti: grana grattugiato grosso; zucchine julien; pinoli tostati; panna fresca; uova; cipolla bianca tritata; peperoni gialli a concassè; melanzane viola a concassè; peperoncino di noverato macinato sottile brodo vegetale; sale; pepe. Per lieson: panna fresca 1 l; 18 rossi d’uovo; circa 18-20 tortini; olio d’oliva extravergine. ✔ Preparare una lieson con il rosso d’uovo e la panna. Spadellare le zucchine con olio d’oliva, sale e pepe e portarle a una cottura “al dente”. Aggiungere i pinoli e il grana. Versare nei stampini in flexipan e coprire con la lieson. Cuocere per circa 20’ a 160° secco. In una padella fare soffriggere la cipolla, quando è rosolata aggiungere i peperoni e bagnare con un po’ di brodo vegetale, sistemare il gusto e cuocere. A cottura ultimata passare con il mixer e emulsionare con olio d’oliva. Spadellare con olio d’oliva le melanzane e portarle a cottura croccante, salare e pepare. Disporre sul piatto il tortino, circondato da passata di peperoni e sopra la dadolata di melanzane. Decorare con una corona di grana fatta al microonde e un filo d’olio d’oliva.
Filetto di vitello farcito di grana e crudo con capperi, olive e pomodorini ciliegia profumati con salsa al Serprino dei colli Euganei ✔ Ingredienti: filetto di vitello di circa 120 g; Grana grattugiato grosso; prosciutto crudo a julienne; capperi con bacello; olive nere a rondelle; pomodorini ciliegia tagliati in 4; Serprino Colli Euganei; sugo di carne (arrosto); olio d’oliva; sale e pepe; farina 00 ✔ Tagliare il filetto per 3/4 e batterlo con il batticarne. Farcirlo con il prosciutto e il grana. Quindi chiuderlo, infarinarlo, aggiungere sale, pepe e cuocere in padella antiaderente a fuoco dolce. Bagnare con il Serprino e il sugo di carne. Dopo cotto tritare la salsa con un po’ d’olio d’oliva. Spadellare con olio d’oliva i capperi con i pomodorini, e quindi aggiungere le olive . Mettere il tutto nella salsa di Seprino e coprire il filetto. Prima di servire, mettere un crostone di pane bianco sotto il filetto. Decorare con una vela di grana e bucce di pomodoro secco.
Ravioli ripieni di fiori di zucchina e ricotta affumicata spadellati con una salsa ai porcini e grana ✔ Ingredienti: pasta all’uovo; fiori di zucchina a julienne; ricotta affumicata grattugiata; olio d’oliva; sale e pepe; grana grattugiato; porcini freschi a fettine; prezzemolo tritato; burro di malga; taleggio a pezzetti; uova; vino bianco secco Colli Euganei. ✔ Tirare la pasta all’uovo e coppare i singoli ravioli. Preparare in una bacinella la ricotta, il taleggio e i fiori di zucchina precedentemente spadellati con l’olio d’oliva. Mettere il ripieno nei ravioli, chiuderli e cuocere in acqua salata. Spadellare i porcini con burro, sale, pepe e un po’ di vino, cuocere. All’ultimo istante aggiungere il grana e versare il tutto sopra ai ravioli con un filo d’olio d’oliva e prezzemolo. Decorare con un cestino di grana.

A tale in three recipes Tartlet of Grana, courgettes and pine nuts in a puree of sweet yellow peppers and a concasse of aubergine with milled Soverato chilli pepper
✔ Ingredients: coarsely grated Grana; courgettes in julienne strips; toasted pine nuts; fresh cream; egg; finely chopped white onion; concasse of yellow peppers; concasse of purple aubergines; milled Soverato chilli peppers; light vegetable stock; salt; pepper. ✔ For the liaison: 1 litre fresh cream; 18 egg yolks;18-20 tartlets; extra virgin olive oil. ✔ Prepare a liaison with the egg yolks and the cream. Sautee the courgettes in olive oil, seasoning with salt and pepper, and remove from the heat while still crunchy. Add the pine nuts and Grana. Pour into the flexipan moulds and cover with the liaison. Bake for approximately 20 minutes at 160 °C, (dry oven). Sautee the onion in a frying pan. When browned, add the peppers and a little vegetable stock. Season to taste and continue cooking. Once cooked, blend in the mixer and emulsify with olive oil. Sautee the aubergines in olive oil untilcrisp, then season with salt and pepper. Arrange the tartlet on the plate, surrounded by the pepper puree and topped with the diced aubergine. Garnish with a crisp of Grana prepared in the microwave and a drizzle of olive oil.
Veal fillet stuffed with Grana and prosciutto crudo, with capers and cherry tomatoes perfumed with a wine sauce of Serprino dei colli Euganei
✔ Ingredients: veal fillet weighing approximately 120 g; coarsely grated Grana; prosciutto crudo cut into narrow strips; caper fruit; black olives cut into rings; quartered cherry tomatoes; Serprino Colli Euganei; meat juices from a roast; olive oil; salt and pepper; plain flour. ✔ Cut 3/4 of the way through the fillet and flatten with a tenderiser. Stuff with the prosciutto and the Grana. Close the fillet, dust with flour, add salt and pepper and fry in a non-stick pan at a low heat. Add a little Serprino and the meat juices. Once cooked, blend the sauce with a little olive oil. Sautee the capers and tomatoes in olive oil, then add the olives. Add to the Serprino sauce, arrange the fillet on a slice of toasted white bread and pour the sauce over the fillet. Garnish with a fan of Grana and dried tomato skins.
Ravioli stuffed with courgette flowers and smoked ricotta tossed in a porcini and Grana sauce
✔ Ingredients: egg pasta; courgette flowers cut into julienne strips; grated smoked ricotta; olive oil; salt and pepper; grated Grana; thinly sliced fresh porcini mushrooms; finely chopped parsley; mountain butter; Taleggio cheese; egg; dry white Colli Euganei wine ✔ Roll out the egg pasta and cut out the individual ravioli. Sautee the courgette flowers in olive oil and mix in a bowl with the ricotta and Taleggio. Fill the ravioli, seal and cook in salted boiling water. Sautee the porcini mushrooms in butter with salt and pepper. Add a little wine and complete cooking. At the last moment, add the Grana and pour over the drained ravioli, adding a drizzle of olive oil and the parsley. Garnish with a basket of Grana.
Che sapore ha il Trentingrana? I cappellacci ripieni con polenta concia al burro di erbette e Trentingrana Ingredienti: Per la pasta: g. 1000 farina 00; g. 160 bianco d’uova; g. 100 acqua; poco sale e poco olio di oliva. Amalgamare il tutto riposando la massa per almeno 30 minuti. Tirare la pasta sottilmente, segnare con coppapasta da cm 7, mettere il ripieno nel centro con sacco a poche in abbondanza dando la forma di una polentina, bagnare con pennello di acqua e ricoprire con altra pasta. Togliere eventuali tracce di aria con una spazzola per farine, coppare con coppapasta da 8 cm. Cuocere in abbondante acqua salata per pochi minuti. Per il ripieno con polenta concia: g. 2000 acqua; g. 30 sale marino; g. 500 farina Storse; g. 30 olio extravergine d’oliva; g. 100 lardo battuto; g. 50 porro tagliato fine; g. 5 aglio; rosmarino; sale e pepe di macinino Bollire l’acqua, salare e versare a pioggia la farina Storese. Frustare evitando il formarsi di grumi. Soffriggere in olio di oliva il battuto di lardo con il porro e l’aglio, profumare di rosmarino ed aggiustare con sale e pepe. Versare il soffritto nella polenta a metà cottura. Per il burro alle erbe: cuocere il burro fino al colore nocciola, spegnere con l’acqua di cottura dei cappellacci ,aggiungere gli stessi ed emulsionarli, profumare con il trito di erbette e del Trentingrana. Presentazione: adagiarvi i cappellacci disponendoli a raggiera, nappare con il burro emulsionato. Guarnire con erbette fritte. Macchiare i piatti con riduzione all’aceto di mele.
Insalata di ovuli e Trentingrana con dressing all’aceto di mele Ingredienti (per 4 insalate): Per gli ovuli nostrani: g.150 insalatine miste croccanti; g.160 ovuli (Amanita Cesarea ) o ovulo buono; g. 60 scaglie di Trentingrana; g. 20 pane essiccato. Pulire accuratamente gli ovuli soprattutto quando sono chiusi ,tagliare sottilmente con la taglia tartufo o con l’affettatrice ,facendo molta attenzione a non rovinare l’ovulo. Pulire le insalate e sminuzzarle. Per il dressing alle mele: g. 30 acqua; g. 30 aceto di mele o sidro; g. 50 mele a cubetti; g. 50 olio extravergine del Garda; g. 50 pinoli tostati. Emulsionare l’acqua con l’aceto leggermente riscaldato, aggiungere le mele a cubetti i pinoli leggermente tostati e per ultimo l’olio extravergine. Presentazione: Alternare gli ovuli tagliati sottilmente alle insalatine al pane ed al Trentingrana. Condire con il dressing e decorare con mele pinoli e riduzione di aceto. Macchiare con l’olio extravergine e decorare con una fettina di pane essiccato e fiori di finocchietto selvatico.
Tagliatelle caserecce al limone con ovuli nostrani e Trentingrana Ingredienti (per 4 persone): g. 200 di farina 00; g. 50 tuorlo d’uovo; la buccia di 1/2 limone grattata; g. 40 vino bianco. Per il condimento: g. 30 burro; g. 30 olio di oliva; g. 2 rametto di timo al limone. Amalgamare la farina con i tuorli d’uova, la buccia di limone grattata ed il vino bianco. Quando la massa è liscia e compatta riposare avvolta in un canovaccio per 20 minuti. Tirare al mattarello sfogliandola il più sottile possibile. Arrotolare e tagliare come una classica tagliatella. Per gli ovuli nostrani: g.320 ovuli (Amanita Cesarea ) o ovolo buono; g. 60 scaglie di Trentingrana Per il condimento finale: g. 30 olio extravergine del Garda; finocchietto selvatico. Cuocere le tagliatelle in abbondante acqua salata mantenendole al dente, saltarle in padella con burro ed olio di oliva profumandole con una grattata di limone ed eventualmente dell’acqua di cottura . Presentazione: Disporre gli ovuli tagliati sottilmente a raggiera sistemare le tagliatelle nel centro alternandole a ovuli e scaglie di TrentinGrana. Macchiare con l’olio extravergine e decorare con bucce essiccate e dei rametti di finocchietto selvatico.

What does Trentingrana taste like? Cappellacci stuffed with larded polenta, served in herbed butter and Trentingrana Ingredients: For the pasta: 1000 g ‘00’ type bread flour; 160 g egg whites; 100 ml water; a little salt and olive oil. Mix well and set aside to rest for at least 30 minutes. Roll the pasta out thinly, mark 7 cm rounds with the biscuit cutter, use a piping bag to place a generous portion of filling in the centre in the shape of a small polenta mound, wet the edges with water and cover with another sheet of pasta. Use a glazing brush to gently push out any air bubbles and cut out with a 8 cm diameter biscuit cutter. Boil for a few minutes in plenty of salted boiling water. For the larded polenta filling: 2 litres water; 30 g sea salt; 500 g Storese polenta flour; 30 g extra virgin olive oil; 100 g pestled lard; 50 g finely chopped leek; 5 g garlic; rosemary; freshly milled salt and pepper. Boil the water, salt and add the Storese polenta flour in a cascade. Use a whisk to prevent lumps from forming. In olive oil, sautee the pestled lard with the leek and garlic, add rosemary for flavour and season with salt and pepper. Add the mixture to the polenta halfway through the polenta cooking time. For the herbed butter: Heat the butter until it turns a nutty brown, cool off with the water used to boil the cappellacci, beat into an emulsion then add the cappellacci, the finely chopped herbs and the Trentingrana. Presentation: Arrange the cappellacci radially and sauce with the emulsified butter. Garnish with fried herbs and dot the plate with reduced cider vinegar.
Salad of royal agaric mushrooms and Trentingrana with a cider vinegar dressing Ingredients (for 4 salads): Preparing the Italian royal agaric mushrooms: 150 g mixed, crisp leaf salad; 160 g royal agaric mushrooms (Amanita Caesarea); 60 g Trentingrana shavings; 20 g dried bread. Clean the mushrooms carefully, especially if still closed. Slice finely with a truffle shaver or a rotary meat slicer, taking great care not to damage the mushrooms. Rinse the salad and chop finely. For the apple dressing: 30 ml water; 30 g cider vinegar; 50 g diced apple; 50 g extra virgin olive oil from Garda; 50 g toasted pine nuts. Emulsify the water and the slightly warmed vinegar, add the diced apple, the lightly toasted pine nuts and lastly, the extra virgin olive oil. Presentation Alternate thin slices of mushroom with the bread and Trentingrana salad. Add the dressing and decorate with apple, pine nuts and reduced vinegar. Dot the plate with extra virgin olive oil and garnish with a slice of dried bread and wild fennel flowers.
Rustic lemon flavoured tagliatelle with Italian royal agaric mushrooms and Trentingrana Ingredients (serves 4): 200 g ‘00’ type bread flour; 50 egg yolks; grated zest of 1/2 a lemon; 40 g white wine For the sauce: 30 g butter; 30 g olive oil; 2 g lemon thyme sprigs. Mix the flour and egg yolks, the grated lemon zest and the white wine. Once the dough is smooth and consistent, wrap in a cloth and set aside to rest for 20 minutes. Roll out as thinly as possible. Roll up the pasta sheets and cut into tagliatella strips. Preparing the Italian royal agaric mushrooms: 320 g royal agaric (Amanita Caesarea) mushrooms; 60 g Trentingrana shavings For the final dressing: 30 g extra virgin olive oil from Garda; wild fennel. Boil the tagliatelle in plenty of salted water, taking care not to overcook, toss in a frying pan with the butter and olive oil, adding a sprinkle of grated lemon zest for flavour and a little of the cooking water if necessary. Presentation: Arrange thinly sliced mushrooms radially around the edge of the plate, at the centre, alternate the tagliatelle with the remaining mushrooms and the Trentingrana shavings. Dot the plate with extra virgin olive oil and garnish with dried lemon zest and sprigs of wild fennel.
